Abstract

Un producto de repostería congelado aireado con un rebasamiento de entre 20% a 140% en volumen, que comprende de 4 a 23% en peso de grasa; de 2 a 0,1% en peso de proteína, de 4 a 50% en peso de un agente edulcorante y de 0 a 3% en peso, preferentemente de 0,1 a 3% en peso de estabilizante natural; caracterizado porque el producto está esencialmente libre de emulsionantes, estabilizantes no naturales, huevos, fuentes de suero de leche y leche, que no sea la crema de leche, que es el principal ingrediente de productos lácteos del producto. También el método para la producción de tal producto de repostería congelado, como así también el proceso para producir tal producto estable con etiqueta limpia.
