Abstract
La presente se refiere a un proceso para la preparación del té. En particular, se refiere al procesamiento del té verde o del té blanco. El aroma del té verde o blanco procesado por medios convencionales generalmente presenta una naturaleza frutal, del tipo miel y/o floral relativamente pobre. El té verde es relativamente de menor agrado para los consumidores no tradicionales de té verde, dado que el té verde (y el té verde instantáneo) tiene relativamente menos aroma. Los presentes inventores han descubierto asombrosamente que el té de hojas verdes obtenido mediante un proceso que comprende un paso de incubación anaeróbica, a una temperatura específica y por un período específico, mientras se evitan ciertos pasos, ofrece un aroma en la taza con la infusión final con compuestos volátiles aromáticos específicos, en relaciones en masa específicas, y en consecuencia, tiene un aroma con notas mejoradas de miel, florales y/o frutales y aun así retiene una cantidad relativamente elevada de catequinas.
