Composiciones lácteas congelables que incluyen leche, procesos para elaborar dichas composiciones y para congelarlas, así como sus usos. La composición muestra un sobredimensionado del 25% al 150%.Reivindicación 20: Una composición láctea de acuerdo con cualquiera de las reivindicaciones 17 a 19, donde la composición incluye: del 2% al 12% en peso, preferentemente del 2% al 4%, o del 4% al 12%, o del 5% al 10%, de xilitol c), del 0,1 al 3% en peso, preferentemente del 0,25 al 1,5%, de un emulsionante d), del 0,1 al 3% en peso, preferentemente del 0,25 al 1,5%, de un agente gelificante e), y donde la composición incluye: materia seca del 25 al 67% en peso, y un contenido en grasa desde más del 0% hasta 20% en peso, preferentemente desde más del 0% hasta 3%, o del 3% al 20%.
