Abstract

Un proceso para aumentar la actividad como estabilizadora del vino de una manoproteína, que comprende tratar una manoproteína con una solucion básica a un pH como mínimo de 9. La manoproteína que se puede obtener mediante este proceso es más eficaz para estabilizar el vino contra la precipitacion de tartratos o contra la formacion de enturbiamiento proteico en comparacion con manoproteína antes del tratamiento con la solucion básica.
