Abstract
La presente proporciona composiciones de texturizacion que proveen propiedades organolépticas favorables a los productos alimenticios con contenido reducido de azucar y sin azucar. Las composiciones de texturizacion incluyen generalmente una mezcla de tagatosa y por lomenos un carbohidrato de cadena larga. Las composiciones de texturizacion poseen un efecto sinérgico sobre las propiedades organolépticas de los productos alimenticios resultantes, particularmente la palatabilidad. Como consecuencia, pueden incorporarse a los productos alimenticios menores cantidades de composiciones de texturizacion.
