Abstract

Composiciones y métodos que utilizan un primer compuesto antimicrobiano (es decir, quitosán, ácido tánico, o mezclas de los mismos) en combinacion con un segundo compuesto antimicrobiano (preferiblemente benzoato, sorbato, EDTA, o mezclas de los mismos) para inhibir el desarrollo de microorganismos en productos alimenticios y especialmente en bebidas. Está también orientada a composiciones de llenado en frío y a métodos de llenado en frío que utilizan quitosán solo o en combinacion con el segundo compuesto antimicrobiano (preferiblemente benzoato, sorbato, EDTA o mezclas de los mismos), para matar microorganismos y/o inhibir el desarrollo de microorganismos en las bebidas.
