Abstract
Un procedimiento para elaborar un precursor en polvo para preparar una bebida ácida después de mezclar el precursor en polvo con un líquido, comprendiendo el procedimiento los pasos de: (a) preparar una primera lechada que comprende una fuente de proteína y un estabilizante de polisacárido, teniendo dicha primera lechada un pH neutro o ácido; (b) ajustar el pH de la primera lechada, si es necesario, a un valor en el rango entre 5,5 y 7,5, preferentemente entre 6 y 7,5; más preferentemente entre 6 y 7; y (c) secar por rociado la primera lechada después del paso (a) o del paso (b).
