Abstract
Método para procesar aceitunas y obtener aceite de oliva, que comprende las siguientes etapas: a) trituracion de las aceitunas a través de un cedazo; b) malaxacion de las aceitunas obtenidas en la etapa a); c) decantacion del aceite de oliva; caracterizado porque en la etapa a) se agrega agua en una cantidad que oscila entre 1 a 40% del peso en base al peso de las aceitunas. También se divulga un aceite de oliva obtenido por el método, un producto alimenticio que contiene el aceite de oliva, un método para preparar una pasta de oliva obtenida por el método y un producto alimenticio que contiene la pasta de oliva.
