Abstract
Un procedimiento para elaborar queso que comprende los pasos de: a. proveer una composicion de leche inicial que tiene una composicion seleccionada de proteína y grasa, donde dicha leche inicial tiene un contenido de grasa de más del 0, 3%; b. agregar una preparacion de goma a la composicion de leche inicial del paso a; c. pasterurizar la composicion del paso b; d. agregar un cultivo y/o ácido iniciador (mineral u orgánico) a la composicion de leche para formar una leche de quesería; e. coagular la composicion de leche de quesería; f. cortar el coágulo para separar cuajo y suero; g. escurrir el suero del cuajo; y h. formar y enfriar el cuajo.
