Abstract
Un producto de confitería helado que tiene un núcleo de producto de confitería helado y una capa de recubrimiento externa en base a grasa, en donde la grasa en el recubrimiento es predominantemente un fragmento medio de grasa palma de tipo blando. El uso del fragmento medio de grasa de palma de tipo blando que tiene un punto de fusión de alrededor de 26° C en un recubrimiento en base a grasa reduce o previene drásticamente la exudación del helado de crema a través del recubrimiento de un producto de helado de crema recubierto.
