Abstract

Un proceso para la producción de leche concentrada entera o leche en polvo, que comprende la preparación de una leche líquida homogeneizada, adicionándole un emulsificante no-iónico negativamente cargado, alimentando luego dicha mezcla a un evaporador que posee al menos una etapa para obtener un concentrado con un total de contenido de sólidos de al menos 50%, en donde el emulsificante es agregado antes o durante la concentración, luego el concentrado es opcionalmente secado por pulverización, a fin de obtener un polvo.
