Abstract
En un método para conservar un producto alimenticio aplicando alta presion, el producto alimenticio (1) es empujado a través de un sistema de tratamiento(2) que tiene una entrada (3) y una salida (4) mientras se mantiene sustancialmente unadiferenci a de presion de por lo menos 10MPa entre la entrada y lasalida. El producto (1) es expuesto a un campo eléctrico y/o magnético variable. Se usa un sistema de tratamiento con una pluralidad de cámaras de tratamiento,en donde las cámaras detratamiento están conectadas eléctricamente para reducir las variaciones de impedancia del sistema de tratamiento durante laconservacion del producto alimenticio. Para el flujo del producto alimenticio las cámaras de tratamiento están conectadas enserie. Un ap arato (10) paraconservar los productos alimenticios comprende por lo menos un sistema de tratamiento (2) que tiene una entrada (3) y una salida (4), un elemento generador dealta presion (11) para empujar un producto (1) a través delsistema de tratam iento, mientras se mantiene sustancialmente una diferencia de presion de por lomenos 10MPa entre la entrada y la salida y elementos (5) para generar un campo eléctrico y/o magnético variable y para exponer el producto al campoeléctricoy/o magnético variable. El sistema de tratamiento comprende una pluralidad de cámaras de tratamiento (2) que están interconectadas eléctricamente para reducirvariaciones de impedancia del sistema de tratamiento y que están conectadas enserie para el flujo del pro ducto alimenticio.
