Abstract

Un procedimiento para preparar glucosa y fructosa a partir de sucrosa que comprende poner en contacto sucrosa con una fructosiltransferasa para producirglucosa, poner en contacto sucrosa con una glucosiltransferasa para producir fructosa, y aislar glucosa y fructosa.
