Abstract

Un procedimiento para preparar glucosa a partir de sucrosa que comprende poner en contacto sucrosa con una fructosiltransferasa para producir glucosa yluego aislarla. Por medio de este procedimiento además puede obtenerse un polifructano. También seda a conocer un reactor para llevar a cabo dichoprocedimiento.
