Abstract
La invencion se refiere a una composicion edulcorante caracterizada porque comprende: (a) al menos un compuesto que tiene una solubilidad en el aguainferior a 60g/100g de solucion 20sC, y (b) al menos un agente anticristalizante que comprende unataz a de al menos un oligosacárido o polisacárido escogidoentre el grupo que está constituido por los hidrolizados de almidon de peso molecular comprendido entre 500 y 8000 daltones y que presenta una temperatura detransicion vidriosa inferior a140sC a 0% de agua, las pirodextrinas y las poliglucosas de peso molecular comprendido entre 1000 y 8000 daltones, solas omezcladas entre ellas. La invencion se refiere además a la utilizacion de una composicion de estas para la fabricacion deazucares coc idos o como soporte dearoma.
