Abstract
Se describe un método para preservar carne y la carne procesada por el mismo. El método incluye las etapas de exponer la carne cruda a una atmósferaque consiste esencialmente de monóxido de carbono y mantener la carne en un contenedor sellado para mantener el color y la frescura mientras se retarda elcrecimiento bacteriano.
