Abstract

Se describen cereales con verduras instantáneas que comprenden, en porcentaje de materia seca, 2% a 90% de verduras, 8% a 96% de cereal, 2% a 15%de materia grasa anadida, hasta 1% de cloruro de sodio, hasta 5% de un caseinato y hasta 1,5% de un agente colorante. La densidad aparente es de 100 a500 gramos por litro y contiene 1,5 a 15% de agua. También se describe el procedimiento para preparar dicho producto mediante cocción-extrusión de unamezcla inicial acuosa, aspiración de vapor antes de la salida de la extrusora y secado del producto extruido.
