Abstract

The invention concerns a method and an arrangement for generating smoke for smoke treatment of foodstuffs. The smoke is developed by means of a technique in which combustion takes place from above, the smoke being used only when there is a charcoal layer of 0.5 to 100 mm on the fuel stack, which has arisen during combustion of the fuel. The charcoal layer acts as a regulator of the combustion air flow, the combustion being allowed to take place at a temperature which is advantageous as regards the development of odours and hazardous substances. The layer of charcoal also acts as a selective filter and removes hazardous substances from the smoke. <IMAGE>
