Abstract

La presente invencion se refiere a una emulsion comestible de tipo aceite en agua con un contenido reducido de grasa (emulsion de aceite/agua) que tiene propiedades reologicas y sensitivas que se asemejan a aquellas de la mayonesa o alimentos para untar. Esto se logra al utilizar una sal de caseina soluble en agua en combinacion con la homogenizacion y acidificacion controladas.
