Abstract
La invencion se relaciona con concentrados de proteina de leche secos y su uso. En particular, la invencion se relaciona con tales concentrados secos los cuales se encuentran con una concentracion disminuida de calcio en un grado tal que permiten mejoras en el uso de los concentrados secos de proteina de leche en la fabricacion de queso. La invencion incluye un metodo de fabricacion de queso que comprende: (a) dispersar en la leche un MPC o MPI seco que tiene por lo menos 70% de materia seca como proteina de leche; (b) tratar la mezcla resultante con una o mas enzimas coagulantes para producir una cuajada; y (c) procesar la cuajada para elaborar queso; en donde el MPC o el MPI seco es MPCF o MPI con baja concentracion de calcio y el grado de supresion de calcio es suficiente para permitir la elaboracion de un queso sustancialmente libre de grumos.
