Abstract
Se proporciona una composición que contiene un hidrolizado de cereal o grano, la cual se deriva de la hidrólisis enzimática, por ejemplo amilasa de cereal o granos en combinación con un hidrocoloide, de preferencia carragenina o una mezcla de goma de xanteno y goma de algarroba, puede utilizarse efectivamente como un imitador de al grasa para preparar productos de carne triturados o pulverizados con bajo contenido de grasa. Los geles termoirreversibles útiles para proporcionar imitadores de la grasa, sin grasa, también pueden prepararse de acuerdo con la invención. Además de al amilasa, la enzima utilizada para la hidrólisis del sustrato cereal/grano puede seleccionarse del grupo que consiste de las amiloglucosidasas (a-1,4-glucano gluco-hidrolasa), celulasas (B,1,4-glucanohidrolasa), pululanasas (pululano 6-glucanohidrolasa), ciclodextrina glicosiltransferasa (a-1,4-glucano-4-glicosiltransferasa), proteasas y sus mezclas.
