Abstract

La presente invención proporciona un polipéptido con actividad de galactolipasa, caracterizado porque la relación entre la actividad de galactolipasa y la actividad de fosfolipasa es de 100.0 o superior, y/o la relación entre la actividad de galactolipasa y la actividad de lipasa es de 150.0 o superior. También se proporciona un ácido nucleico aislado que codifica dicho polipéptido con actividad de galactolipasa, un vector de expresión que comprende dicho ácido nucleico y una célula huésped que comprende dicho ácido nucleico o vector de expresión. Además, se proporciona el uso de dicho polipéptido con actividad de galactolipasa como aditivo alimentario o en la preparación de un producto alimenticio, y un método para preparar un producto alimenticio utilizando dicho polipéptido con actividad de galactolipasa. Además, se proporciona un producto de masa, rebozado o producto de panadería obtenido mediante un uso o un método como se describe en este documento.
