Abstract
Una composición alimenticia en la forma de una emulsión de agua en aceite en agua que comprende agua; una fase oleosa que comprende aceite vegetal que es líquido a 20 °C y un emulsionante de agua en aceite que comprende cristales grasos, en donde los cristales grasos son triglicéridos o mezclas de triglicéridos que cristalizan a una temperatura de entre 58 y 72 °C y en donde los cristales grasos están presentes en una cantidad de 0.5 a 15% en peso basado en el peso de la fase oleosa, en donde la fase oleosa está presente en una cantidad de 5 a 76% en peso, basado en el peso de la composición; un emulsionante de aceite en agua, no siendo yema de huevo y que comprende menos de 5% en peso de fosfolípidos, presentes en una cantidad de 0.2 a 6% en peso, basado en el peso de la composición; yema de huevo. El proceso para preparar está composición alimenticia en donde la yema de huevo se combina con la emulsión de agua en aceite en agua.
