Abstract
Una composición y método para preparar un hidrolizado de proteína de maíz que incluye obtener una composición de proteína de maíz que tiene una concentración de proteína de maíz de al menos aproximadamente 75 % en peso, añadir una enzima a una suspensión de proteína de maíz que contiene la composición de proteína de maíz en una relación de aproximadamente 1:100 a aproximadamente 1:20 en peso de enzima a proteína de maíz, controlar el pH y la temperatura de la suspensión de proteína de maíz para hidrolizar la proteína de maíz, y terminar la hidrólisis de la proteína de maíz para proporcionar un hidrolizado de proteína de maíz que tiene una solubilidad de aproximadamente 7 % a aproximadamente 37 % a un pH seleccionado del grupo que consiste en pH 7.0, pH 3.4, pH 5, y todos de Ph 7.0, pH 5, y pH 3.4.
