Abstract
La presente invención describe una manera eficiente de aislar ácido siálico de un caldo de fermentación. El ácido siálico contenido en el caldo de fermentación es producido mediante fermentación bacteriana. El proceso inventivo comprende un paso de remover biomasa del caldo de fermentación, un paso de someter la solución resultante a al menos uno de un tratamiento de intercambio iónico catiónico y un tratamiento de intercambio iónico aniónico y un paso de remover sales del tratamiento de intercambio iónico. El proceso puede proporcionar el ácido siálico en forma de secado por aspersión así como también en la forma de cristales de ácido siálico.
