Abstract
La invención se refiere a una composición particulada de condimento de carne que comprende: a) 10-70% en peso de componente farináceo que comprende: 5-30% en peso del componente farináceo de componente de semolina que tiene un tamaño de partícula de más de 100 µm a 1,200 µm, dicho componente de semolina se selecciona a partir de semolina de trigo, semolina de arroz, semolina de maíz, semolina de centeno, semolina de tapioca y combinaciones de las mismas; 70-95% en peso del componente farináceo de componente de harina que tiene un tamaño de partícula de 10 µm a 100 µm, dicho componente de harina se selecciona a partir de harina de trigo, harina de arroz, harina de maíz, harina de centeno, harina de tapioca y combinaciones de las mismas; b) 30-90% en peso de uno o más ingredientes de condimento seleccionados de cloruro de sodio, cloruro de potasio, glutamato de sodio, especias, hierbas vegetales, fruta, sacarosa, extracto de levadura, 5' - monofosfato de inosina 5'-monofosfato de guanosina e hidrolizado de proteína; en donde el componente farináceo tiene una distribución de tamaño de partícula multimodal con al menos un máximo por debajo de 100 µm y al menos un máximo por arriba de 100 µm. Esta composición particulada de condimento de carne que puede ser aplicada de manera adecuada sobre productos cárnicos, tales como filetes y cortes de carne más grandes, antes de que estos productos cárnicos sean cocidos, por ejemplo, mediante freído en sartén y/o rostizado en el horno. La composición de condimento no solo mejora el sabor del producto cárnico cocido sino también mejora la jugosidad del producto cárnico cocido, listo para comer.
