Abstract

La invención se refiere a emulsiones de aceite en agua (O/W) que pueden airearse para producir emulsiones espumadas. Más particularmente, la presente invención se refiere a una emulsión O/W aireable o aireada que comprende una fase acuosa continua y una fase oleosa dispersada, conteniendo dicha emulsión: • 25-55% en peso de agua; • 4-50% en peso de aceite; • 3-12% en peso de ciclodextrina, seleccionada de alfa-ciclodextrina, beta-ciclodextrina y combinaciones de las mismas; • 20-60% en peso de sacáridos, seleccionados de monosacáridos, disacáridos, oligosacáridos no cíclicos, alcoholes de azúcar y combinaciones de los mismos; • 1-20% en peso de polisacáridos; • 0-30% en peso de otros ingredientes comestibles; en donde los sacáridos están contenidos en la emulsión en una concentración de al menos 60% en peso de agua, y en donde los polisacáridos están contenidos en la emulsión en una concentración de al menos 2% en peso de agua. Las emulsiones O/W de la presente invención son capaces de formar emulsiones espumadas con alta firmeza y excelentes propiedades de retención de la forma. Estas emulsiones espumadas adicionalmente ofrecen la ventaja de que exhiben una excelente estabilidad.
