Abstract
Un método para producir sialiloligosacáridos, una fuente que contiene sialiloligosacáridos que también contiene carbohidratos y minerales. El proceso incluye someter la fuente a una temperatura de alrededor de 67°C y (i) filtrar con un filtro resistente al calor a una temperatura de alrededor de 35 a alrededor de 95°C para producir un primer retentato y un primer permeado, o (ii) separación centrífuga para producir una fase ligera y una fase pesada y filtración de la fase ligera a una temperatura de alrededor de 50 a alrededor de 70°C para producir un primer retentato y un primer permeado, (b) nanofiltración del primer permeado, o nanofiltración y diafiltración del primer permeado, para producir un segundo retentato y un segundo permeado, y (c) concentración del segundo retentato para producir un extracto que contiene sialiloligosacáridos. Además, la invención se refiere a una composición enriquecida con sialiligosacáridos que comprende al menos 3'-sialillactosa y 6'-sialillactosa y su uso en, por ejemplo, fórmulas nutricionales e infantiles, y para mantener o mejorar la función cognitiva.
