Abstract
La presente invención se refiere a una formulación nutritiva que contiene un aislado de proteína de guisante, caracterizada porque el aislado de proteína de guisante contiene entre un 0.5 y un 2% de aminoácidos libres; tiene una viscosidad; de 13 a 16×10-3 Pa.s. a una tasa de corte de 10 s-1; de 10 a 14×10-3 Pa.s. a una tasa de corte de 40 s-1, y de 9.8 a 14×10-3 Pa.s. a una tasa de corte de 600 s-1; tiene una solubilidad; de un 30 a un 40% en zonas de pH de 4 a 5; de un 40 a un 70% en zonas de pH de 6 a 8; la invención también se refiere al uso de esta formulación nutritiva como única fuente de proteínas o como complemento alimenticio, destinado para lactantes, niño y/o adultos.
