Abstract
La presente invención se refiere a composiciones y métodos para la producción de un hidrolizado que comprende al menos una endoproteasa y una tripeptidil peptidasa que puede escindir tripéptidos del N-terminal de un péptido y/o proteínas que tienen una o más de lisina, arginina o glicina en la posición P1, donde la tripeptidil peptidasa puede usarse a una temperatura entre 45°C y 70°C.
