Abstract

Un método para producir un hidrolizado que comprende: (a) mezclar al menos una proteína o una porción de esta con: (A) al menos una endoproteasa; y (B) (a´) al menos una tripeptidil-peptidasa que tolera la prolina o fermentado que comprende una tripeptidil-peptidasa que tolera la prolina que tiene predominantemente actividad exopeptidasa, donde la tripeptidil-peptidasa que tolera la prolina es capaz de escindir tripéptidos del N-terminal de péptidos que tienen: prolina en P1, y aminoácidos sintéticos en P1; o (b´) al menos una tripeptidil-peptidasa que tolera la prolina que tiene actividad exopeptidasa donde la tripeptidil-peptidasa que tolera la prolina es capaz de escindir tripéptidos del N-terminal de péptidos que tienen: prolina en P1´; y aminoácidos sintéticos en P1´; y (b) recuperar el hidrolizado. La invención también se refiere amétodos para producir un hidrolizado que comprenden el uso de una endoproteasa, una exo-tripeptidil-peptidasa de la familia S53 y una aminopeptidasa, a usos de una tripeptidil-peptidasa que tolera la prolina, composiciones, composiciones de un aditivo alimentario y/o para piensos que la comprenden, así como también a hidrolizados y usus de tripeptidil-peptidasa que toleran la prolina.
