Abstract

Se describe un proceso para la manufactura de una premezcla para una confitería congelada, el proceso comprende las etapas de: (i) formar una emulsión aceite en agua que comprende grasa en una cantidad de por lo menos 45% en peso de la emulsión; (Ii) proveer una composición adyuvante que comprende sacáridos, edulcorante no sacárido, proteína o una combinación de los mismos; (iii) proveer un líquido acuoso y (iv) combinar la emulsión, la composición adyuvante y el líquido acuoso.
