Abstract

La presente invención se relaciona con un método para secado de un producto alimenticio, el cual comprende la etapa de: a) insertar el producto alimenticio en un depósito, el depósito se define por el recipiente de un mezclador; y b) secar el producto alimenticio en el depósito al aplicar vacío al depósito, método en el cual el suministro de calor al producto localizado dentro del depósito se lleva a cabo cuando se aplica vacío al depósito durante la etapa b) de manera que se mantiene y/o se incrementa la temperatura del producto durante la totalidad o parte del proceso de secado al aplicar vacío al depósito, el suministro de calor se lleva a cabo por transferencia de calor entre por lo menos un fluido de transferencia de calor y el producto y/o por irradiación del producto con radiación electromagnética.
