Abstract

La presente invención se refiere a un método para preparar un producto basado en maíz el método que comprende poner en contacto una composición vegetal que comprende (que consiste de o que consiste esencialmente de) maíz o un subproducto de maíz o una combinación del mismo con una xilanasa que comprende: i) un polipéptido como se expone en SEQ ID No. 8 o SEQ ID No. 7 o SEQ ID No. 6; o ii) una variante, fragmento, homólogo, fragmento o derivado del mismo que tiene al menos 85% de identidad con SEQ ID No. 8 o SEQ ID No. 7 o SEQ ID No. 6; o con una xilanasa codificada por: a) una secuencia de nucleótidos mostrada en la presente como SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1; o b) una secuencia de nucleótidos que puede hibridarse al complemento de SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1 bajo condiciones de astringencia alta: o c) una secuencia de nucleótidos que tiene al menos 80% de identidad con SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1. La presente invención se refiere además al uso de la enzima para producir alimentos para animales basados en maíz. La presente invención todavía se refiere adicionalmente a un método para producir una bebida fermentada que comprende la etapa de poner en contacto una pasta y/o un mosto con una xilanasa que comprende un polipéptido como se expone en SEQ ID No. 8 o SEQ ID No. 7 o SEQ ID No. 6; o una variante, fragmento, homólogo o derivado del mismo que tiene al menos 85% de identidad con SEQ ID No. 8 o SEQ ID No. 7 o SEQ ID No. 6; o codificado por una secuencia de nucleótidos mostrada en la presente como SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1, o una secuencia de nucleótidos que se puede hibridar al complemento de SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1 bajo condiciones de astringencia alta, o una secuencia de nucleótidos que tiene al menos 80% de identidad con SEQ ID No. 3, SEQ ID No. 2 o SEQ ID No. 1.
