Abstract
Se describe un producto de bebidas que incluye agua, un color derivado de fuentes naturales o su equivalente sintético, y un inhibidor de desvanecimiento de color que incluyen un compuesto seleccionado del grupo que consiste de isoquercitina (EMIQ) enzimáticamente modificada, rutina y miricitrina, y opcionalmente ácido fumárico. La incorporación de EMIQ puede ser particularmente útil para inhibir el desvanecimiento de color del producto de bebidas expuesto a la radiación de luz UV. Los colores derivados de fuentes naturales pueden ser beta-caroteno, zanahoria negra y/o extracto de manzana natural.
