Abstract

The present invention is related to the industrial sector intended to manufacture food. More particularly, the invention relates to a novel composition in microcapsules of noni juice. More specifically, the invention is able to reduce the organoleptic properties of the fruit that may be unpleasant for the consumer. And more particularly, the invention is a product based on the quantification of phenols, total flavonoids, vitamin C and antioxidant, which are important characteristics of noni, for being used as a nutraceutical. Said process of microencapsulation of noni juice with nutraceutical qualities is characterized by comprising a series of steps: a) pretreating the fruits; b) extracting the juice by centrifugation; c) adding the microencapsulating agents to the juice; ch) incorporating the mixture with a five-speed blender (Black and Decker MX900, MÚxico), using speed 2 maximum for half an hour; d) letting the mixture to rest for 12 h for allowing the microencapsulating agents to be completely hydrated and e) drying the mixture by aspersion in parallel flow.
