Abstract
La presente invención se refiere a un proceso para mejorar la conservación de un producto de panadería por medio del uso de natamicina. Se proporciona una composición que comprende natamicina en la forma de un complejo de natamicina-ciclodextrina y la composición sobre un producto de panadería como un agente antifúngico. La invención se refiere, además, a un producto de panadería que comprende una cantidad de natamicina eficaz como antifúngico. Otro aspecto de la invención es una composición de natamicina antifúngica y el uso de esta, en donde la composición tiene una actividad antifúngica modificada. Además, la invención se refiere a un proceso para modificar la actividad antifúngica de la natamicina.
