Abstract
La invención proporciona una composición saborizante de Maillard que comprende una fase lípida estructurada, un solvente polar, que no es agua, y al menos un producto de reacción de Maillard. La invención se refiere además a un método para hacer la composición en una fase lípida estructurada usando un solvente polar que no es agua.
