Abstract
La presente invención se dirige generalmente a un método para fabricar un producto a base de pescado congelado a partir de un filete de pescado completo. El producto a base de pescado congelado tiene muchas de las características de una porción de lomo, que incluyen resistencia mejorada al deshielo parcial durante la aplicación de calor. La invención se refiere a un método para procesar un pescado y un producto a base de pescado comestible producido de tal modo, en donde el método incluye las etapas de doblar un filete de pescado completo aproximadamente a la mitad y congelar el filete de pescado doblado, antes del procesamiento superficial externo subsecuente.
