Abstract
La presente invención se refiere a secuencias de polinucleótido novedosas que comprenden genes que codifican enzimas lipoliticas novedosas, así como también equivalentes funcionales del gen o de las secuencias de aminoácido con una homología alta a ésta. La invención también se refiere a métodos para utilizar estas enzimas lipolíticas en procesos industriales, por ejemplo en industrias lácteas y de horneado.
