Abstract

Se describen un método y formulación para usar una mezcla de inulina y agente tensoactivo, para superar problemas adhesivos y visco-elásticos asociados con el uso de laminadores de tortilla para procesar masa a base de arroz para hacer hojuelas de arroz. La inulina reduce la visco-elasticidad mientras el agente tensoactivo reduce la adherencia. El aditivo desacopla la relación entre el contenido de agua y la adhesión y la visco-elasticidad de la masa, permitiendo la utilización de un contenido de agua para controlar otras variables del producto tales como contenido de humedad del producto y absorción de aceite.
