Abstract
La presente invención proporciona una composición de manteca libre de ácidos grasos trans y comprende al menos un monoglicérido parcialmente acetilado, al menos un monoglicérido completamente acetilado, al menos un mono diglicérido mixto, y al menos un aceite vegetal. La composición de manteca de la presente invención opcionalmente comprende al menos una mezcla de grasas vegetales y opcionalmente comprende uno o más antioxidantes. Además, en algunas modalidades la composición de manteca es anhidra. La composición de manteca de grasa cero trans de la presente invención se caracteriza por plasticidad y elasticidad excelentes, y es útil para la preparación de artículos horneados finos.
