Abstract
La presente invencion en un primer aspecto concierne a la modulacion del sazon en alimentos, bebidas, productos farmaceuticos, productos de tabaco y productos para el cuidado oral, usando una sustancia moduladora de sazon seleccionada del grupo de sustancias representado por la Formula (1) o la Formula (II), sales comestibles de las mismas y esteres comestibles de las mismas. Se encontro que estas sustancias son capaces de impartir atributos de sabor muy deseables en los productos en los que son incorporadas. Ademas, dichas sustancias moduladoras de sazon son capaces de modular y complementar el impacto sensorial de otras sustancias impartidoras de sazon. Por consiguiente, las sustancias de la presente son aplicadas ventajosamente en composiciones sazonadoras, alimentos, productos farmaceuticos, productos de tabaco y productos para el cuidado oral. Ejemplos tipicos de sustancias moduladoras de sazon conforme a la presente invencion incluyen 2- hidroxi- N- (2- hidroxi- 2- metilpropil)- propanamida, N- lactoil 1- amino- 2- propanol, N- lactoil 2- amino- 1- propanol, N-lactoil- 2- amino- 2- metilpropanol, N- gluconil 1- amino- 2- metil- 2- propanol, N- gluconil 1- amino- 2- propanol, N- gluconil 2- amino- 1- propanol, N- gluconil- 2- amino- 2- metil 25 propanol, N- (2- mercaptopropil) lactamida, sales comestibles de las mismas y esteres comestibles de las mismas.
