Abstract
The invention relates to the food industry, in particular to a process for producing alcoholic beverage from grapes.The process, according to the invention, provides for the crushing of grapes without destemming, moderate pressing thereof, separation of must from pomace, thermal treatment of pomace, alcoholization of must and pomace with ethyl alcohol rectificate until reaching a strength of 20…40% vol. and 40…70% vol. respectively, ageing of alcoholized must for 2 months and maceration of alcoholized pomace for 1…3 months, separation of macerate from pomace, blending thereof with the alcoholized must to obtain a strength of the finished product of 35…45% vol. and subsequent settling.
