Abstract
The invention relates to the food industry, namely to a process for producing beer.The process, according to the invention, provides for the preparation of wort from barley malt, addition of sweet sorghum juice concentrate, addition of hops, boiling of wort with hops to produce a desired extract content, filtration, cooling and clarification of wort, addition of yeast, fermentation, secondary fermentation and maturation of beer with subsequent filtration, at the same time it is added sweet sorghum juice concentrate with a content of 72…75% of dry substances and 45…50% of sugar, in an amount providing 30% of the amount of wort extract.The result consists in simplifying the technological process and reducing the material costs.
