The only one I’ve ever heard of doing this was that Star Wars hotel that was supposed to imitate the idea of an interstellar cruise ship.

None that I’m aware of. Even casino hotels only keep the casino floor “timeless”, and maybe the nightclubs and restaurants. The rooms are normal.

I think any country with a building code that requires rooms to have windows would prevent hotels from doing that. Unless they leave the curtains closed before handing over the keys and hope the guest doesn’t open them. Lobbies are usually designed to be bright and have natural light. So yeah, it’s just casinos attached to hotels, not the hotels themselves.
