Apple Jack Quesadillas

We went to the library and got a cookbook by Rachael Ray titled Yum-O. It has a lot of great recipes the kids can make or at least help to make. Caity wanted to make dinner all by herself. That is fine with me. I do not really care to cook, so as soon as someone in my house wants to do it, I am ready to let them do it. She made Apple Jack Quesadillas. It is a little spicy but everyone in my house likes spicy. Olive oil cooking spray 4 Tbp pepper jelly 4 (10-12 in) whole wheat flour tortillas 2 cups shredded Monterey Jack or Pepper Jack 1 McIntosh apple, cored and sliced thinly Preheat oven 150 degrees Preheat the cooking spray in the pan. Spread 1 Tbs of pepper jelly on the tortilla and place it it in the pan, jelly side up. Cover half the tortilla with about 1/2 C of cheese and 1/4 of the apple slices. Beat the Heat 2011 5K

For some reason, 2 weeks ago I thought it would be a good idea for Beth and I to do a 5k. It did not matter that I had not ran in 6 months, but of course I could train in 2 weeks. Well that was a dumb thought, but we did it and we ran all the way. My kids wanted to run their first 1 mile fun run. They all did an amazing job, I was very proud of them. Beth and I before the race. We made it !!! After all that running we had to finish it off with some Krispy Kreme doughnuts !! YUM YUM! Now Beth wants us to run a 10K. I have to start training now.

The Bird Family

The kids and I have been lucky enough this summer to watch these birds start as eggs and grow until they were old enough to leave the nest. The birds were just hatched from their eggs. Growing and asking mom to feed them. Getting ready to leave their nest. I think this is so neat. The bird had just hopped on the branch from the nest and I got to watch him take his first flight. We have been watching them since they were hatched, I felt like a proud mom watching him fly for the first time. Good luck little birdies.
