ZARDA 

Ingredients:
 • 1 cup basmati rice
 • 5 cups water for boiling rice
 • 3 pinches saffron or kesar)
 • 4 tablespoons ghee
 • 4 cloves crushed
 • 4 cardamoms crushed
 • 2 to 3 tablespoons mawa
 • 1 teaspoon kewra water
 • For sugar syrup
 • 3⁄4 cup sugar
 • 4 tablespoons water
 • Mix nuts & fruits (sliced)
 • 8 almonds chopped
 • 8 cashews chopped
 • 10 pistachios chopped
 • 10 raisins

Instructions:
 • 1. To prepare Zarda rice, rinse the rice thoroughly at least three times and soak it in water for 30 minutes. After that, boil 5 cups of water in a large pot and add saffron. Drain the water from the rice and add it to the boiling water.
 • 2. Cook the rice until it is 95% done, ensuring that the grains are fully cooked and not hard. Once done, drain the rice and

 • For Boiling Rice:

Long Grain Basmati Rice (soaked for 30 minutes) – 2 cups
 • Water – 5 cups
 • Green Cardamom (slightly cracked open) – 4 pods
 • Star Anise – 1
 • Cinnamon Sticks – 2
 • Cloves – 3 or 4
 • Food Color (yellow) – ½ teaspoon
 • For Assembling:

Desi Ghee or Clarified Butter – 2 tablespoons
 • Fine Granulated Sugar – 1½ cup
