I couldn't ask for more.....

I really couldn't have asked for a better day! We had a wonderful easy day! Lots of laughts and big smiles! Sweet moments for us all! We so love the weekends, when daddy is home. He works long hours during the week, so we don't to do as much!

Lil E has been telling me, no more bangs for awhile. I have flipped back and forth on cutting her hair back off or letting it continue to grow. When it gets long, I is stringy and lots of work. And she doesn't like that! So even though I had a lot of people say to me lately, just how beautiful it is long, and they are glad I haven't cut it off lately, we just went for it today! And she loves it so much and so does Mommy! So here you go, the old and the new side by side! What do you think?



Lil K has really grown into her personality! Oh my, she is just the funniest lil thing ever! She groans and roar's at ya! She is going to get ya! And she says so many cute little things, "I got" and " I not" are too cute, but the sweetest of it all is "Od" for God, she says this when we are saying our prayers! And of course the ever so sweet, but only a couple of times so far, ove eww! I just love as they learn and grow, and she is really lil miss independent. She loves to do it all by herself!

She loved her hair so much, and was so proud of it, that she couldn't even stand still for a picture. She was just prancing and turning and twirlling!



All of us have moments when we say, can't yall get a long? Then you are reminded just how much they adore each other! I mean, look at Lil E she is helping her sister above, making sure she doesn't fall. This was all on her own! Then below they are loving on each other and Lil K is giving kisses! I know they love each other always and there will always be sibling spats, but I tell ya, for me, when I see times like this, I have to stop and say, "Thank you, Heavenly Father, for allowing me to give love so freely to my girls, as you love us, so that they know love and are able to give it too." It really makes me proud!


As we played out side, Lil K, was having some fun on their riding toy and their lil pink lawn mower! She loves the outdoors, and loves to just go and walk and run all about! Lil E was the very same way, and still is!


Then it was inside, and sissy was taking a nap! After reading to Lil E, she was sharing lots and lots of kisses, and she said to me, "I love you, my sweet Mommy!" I just want to cry, every time she says sweet things to me!


We started dinner and went outside to feed the horses some carrots! They love carrots and we love feeding and lovin them! Dinner was oh so very yummy! Sandra shared a recipe for Beef and Bacon Pinwheels. They were so delish! We didn't have any white wine, so we omitted it and added in worcheshire sauce. Then we didn't have any onion gravy mix, so we used dried onions and steak seasoning! It all worked, and I do play to try them the original way too. But we were all loving dinner. We had baked potatoes and corn on the side. While we were out playing, I took the opprotunity to take a few pictures too....

OH MY!!! You might ask, what is that huge thing? It's a Texas Tumbleweed! That's right, it was super windy and it blew up today!
As Lil E was playing I couldn't help but enjoy the view, all three horses were on the other side of the tank! It was beautiful!
Just before we headed in, Lil E decide to take a lil rest on their swing! And she had Daddy push her, as she rested.

Then it was in for dinner and some more family time! We all had lots of fun today! Hope that everyone is having a beautiful weekend! Do you have plans to watch the super bowl tomorrow? We will and will be making cheese dip and hot dogs.

We choose them!

We choose them... And I'm so thankful that we did, I am the one who's life has been made so much more! My daughters, the ones that I was given from God's arms through the loving gift of Adoption! They make me do all that I do to be a better mom, person, to make their life better! Jesus Christ did choose us, too! He gave his life for all of ours! What a wonderful gift. Salvation is the most wonderful gift anyone can receive, and you know what it's free! How much better can it be?

Slow Cooking Thursday



I love doing this Slow Cooking Thursday each week. I love my crock pot and use it so often! It really is unreal how much I sometimes use it. And I love to get and try new recipes, so this really is awesome! Click on the banner above and it will carry you over to Sandra's (Diary of a Stay at Home Mom). She is the lovely host of SCT. You will find many more great recipes there!


With this weekend being the super bowl, I thought it would be fitting to share a game time recipes.


Crockpot Hot Wings


5 lbs of chicken wings
1 jar of Hooters Hot Wing Sauce or make your own sauce from recipe below.

Cut wings into 3 pieces and discard the tip. Brown in skillet and then place in crock pot. Stir in 1 jar of Hooters Hot Wing Sauce, or pour your homemade sauce over and toss around to insure all wings are coated. Cook on low for 3 - 8 hours.


Hot Wing Sauce

1 1/2 cups butter, melted
1/2 cup Tabasco Sauce plus 2 Tablespoons
3 tablespoons dark brown sugar
3/4 teaspoon paparika
3/4 teaspoon salt
1 tablespoon balsamic vinegar
3/8 teaspoon cayenne pepper
2 tablespoons chili sauce

After the wings are done, if you desire a crunchy wing, you can fry in hot oil for a few seconds.
And an all time favorite at our home....


Cheesy Beef Taco Dip

2 lbs of ground beef or 1 lb ground beef and 1 lb ground sausage
1 onion, chopped
1 green pepper, chopped
2 lbs velveeta cheese, cubed
1 jar of taco sauce
1 can of rotel

Brown your meat with your onion and pepper. When it is no longer pink, drain and put in your crockpot. Add velveeta, taco sauce, and rotel to the crock pot. Stir all together and cook on low for about 3 - 4 hours. Stirring occasionally. Serve with your favorite toritilla chips. We love ours chips warmed in the oven.

What a difference a week makes.....

What a difference a week makes. We have had a much dryer and some warmer winter this year. A week ago, we were in long shorts and capri pants playing outside and feeding the ducks at the park. This week, it's a whole other thing!


I mean, really look here we are out at the park, feeding the ducks! And I couldn't help but share this picture of the girls! It is a new favorite of mine! I can see how much love they have! Lil E loves to hold and love her sissy!

And then look at this, of Lil K! I just love this! It was taken yesterday of her, she was just rolling around and laying on their big stuffed dog! That's what kind of day we had here yesterday! We didn't do much of anything at all. I made the Santa Fe Soup that I had posted the recipe for a few weeks back. Instead of chicken, I had left over turkey, so I used that! Then I made turkey salad with the remaining turkey. It all turned out great! I tried to blog yesterday, and had nothing but trouble, so I didn't get a blog up! What did yall do this past weekend? We didn't do to much on Saturday, it was cool here. Sunday, wasn't to cold. But the girls and I stayed in. We cooked a turkey in the oven and had green beans and mashed potatoes to go with it. Saturday evening we had family night and some snacks. It was lots of fun. And Lil E and I baked some Lemon cookies for daddy! I'll share some pics and the recipe later. They turned out good.


Then this morning at 6:30 am, I wake up, and we have a lil snow! I'm so so happy! It's our first snow all winter. We had some ice and sleet too. But we did get some snow! Not that much! But all the more, it was snow! So we had lots and lots of fun playing in the wintery weather mix! I even woke Lil E up too see the snow! She was just as excited. And when we all were up and about, it was out to play!

A not so busy week around here.

How has your week been? Ours has been ok. It's been a house full of sickies this week. Lil K has been teething, and then all of us have been sick with allergy colds. It's been crazy for sure. So Momma has been busy taking care of her babies! We went ahead and took the girls pictures as schedule. And I'm so so glad we did! They turned out wonderful! We are very pleased with the pictures! Here's some of them for you to see too!





I just love when Lil E is hugging on Lil K. Warms moms heart! Even though she has been a bit under the weather, she (Lil E) is still the lil comidian. I have to tell you a lil story! She is always amazing with her logic and all she is figuring out on her own. Well she has learned from other little ones, that boys do stand to go to the potty, so she has decided that since your hiney area can't reach the the toilet while standing up, that boys must pee from their belly buttons! I can't tell you how hard I laughed! Once I walked away from her! It was the funniest thing! ... ... And last week, I forgot to share with you all, she was just a chattering away, and I asked her, "Lil E, do you ever stop chattering?" She said no, without skipping a beat.... "No Mom, because my mouth wont let me. My froat is fixed now, so I can keep talking." It was too funny!!!! We did go to the park for a bit today, we had a cold front coming through today, so I wanted to get out in the fresh air for a bit. As we are going to have a cold weekend, and then some much needed and appreciated wet weather next week. I hope and pray we do get the rain we need! We live such a simple and plain country life, nothing exciting, but we love it!

SCT ~ Crockpot Spanish Rice



Check out SCT over and Sandra's for other great crock pot recipes!



Crockpot Spanish Rice


2 lbs. ground beef
1 medium onion, chopped
1 green pepper, chopped
1 (28-oz.) can diced or stewed tomatoes
1 (16-oz.) can tomato sauce
2 tsp. chili powder (or to taste)
2 tsp. seasoned salt (to taste)
1 TBSP Worcestershire sauce
2 cups uncooked rice
grated Monterey Jack or Cheddar Cheese (optional)


Brown ground beef in skillet and drain off fat. Put browned beef and the rest of the ingredients except the cheese in a crockpot. Stir thoroughly. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 hours. Sprinkle with grated cheese before serving, if desired.

The BEST Enchiladas

Happy Tuesday! Hope you had a great day! Our day was good. We ran to town, picked up a few things we needed. Then just spent the day here at home.

For dinner though, I made the BEST Creamy Chicken Enchiladas ever!

This is my recipe. I have changed and adopted it to fit us, and came out with the best results ever!


Patty's BEST Creamy Chicken Enchiladas

4 boneless skinless chicken breasts (Flattened and grilled with fajita seasonings and black pepper), cubed

1 8oz block cream cheese, softened
2 teaspoon dried onion
1 tsp garlic powder
1 - 2 tsp fajita seasoning
1/2 tsp black pepper
1 cup of mozzarella cheese



8 - 12 flour tortillas, room temperature



2 cans of cream of chicken soup
2 cups of sour cream (16 oz container)
1 cup milk
1 can of Ro-tel tomatoes with green chilies
2 cups of shredded cheddar cheese



In a large mixing bowl, mix together well, cream cheese, dried onions, garlic powder, fajita seasoning, and pepper. Stir in the cubed chicken and mozzarella cheese.



In another large mixing bowl, combine soup, sour cream, milk, and ro-tel. Mix until smooth and blended.



Spray large baking dish (i use the large pyrex) with non stick cooking spray. Then spread a little of the soup mixture over the bottom. About 1/2 cup or so. Just enough to lightly cover the bottom.



Roll enchiladas with chicken mixture and lay in baking dish seam down. When all are in the pan, top with soup mixture. Bake in 350 preheated oven. (uncovered) Bake for about 40 minutes. Remove and top with cheddar cheese, place back in the oven and cook for about 10 to 15 minutes.





I tell you these have soared to the top of our list, as a favorite meal! Hubby isn't a huge fan of chicken enchiladas, and says these are the BEST ever! He asked if they could move to a favorite dish of his!

Garden

How many of you will be planting a Garden? We are so excited. This year we will be planting a garden. It will be the first since living here. I can't wait. I know for sure we will have tomatoes (as they are Lil E's favorite, and I need them for many things), onions, bell peppers, and jalapenos. Those are the for sure items. I am excited to see what else we do plant. I'd like to plant some black eyed peas and squash too. Hubby and I decided this weekend, that we are having a garden here.

I spent some more time scrapbooking over the weekend. I'll share some pages with you soon. For dinner tonight, we had grilled chicken (BBQ'd), cheesey potatoes, and baked beans. It was really yummy! Tomorrow I am going to make some chicken enchilladas, but it will be with a new recipe. I can't wait to try them out. Plus I plan to make hubby some lemon cookies this week. Tomorrow is suppose to be really pretty out, so I'm sure the girls and I will head to the park from some play time. And the girls are getting their pictures taken this week too. I can't wait. I'll be so very excited to share them with yall. What's on your agenda this week?

Scrapbooking kind of Day

I actually have done a lil scrapbooking today. I can't believe it, I completed 2 lay outs, 4 pages! Maybe I'm back on the roll. I love to scrapbook, just don't do it much anymore.


Hubby was working today, so my friend and I took the girls for an ice cream. They enjoyed it. We just had a relaxing day here at home. Made tacos and nachos for dinner. They were yummy! Hope everyone had a nice Saturday!

SCT ~ Santa Fe Chicken Soup

Head over to Sandra's, she is hosting the Slow Cooking Thursdays! You will find many awesome recipes!



Santa Fe Chicken Soup



4 boneless chicken breasts, cooked with taco seasoning, and shredded
1 small onion, diced
1 can of whole kernel corn, undrained
1 can of pinto beans, undrained
1 (14 - 15 oz) can of petite diced tomatoes, undrained
1 can of Ro-tel, undrained
3/4 lb of velveeta cheese, cubed
1/2 c milk



Put all in crock pot. Stir together well. Cover and cook on low for about 4 hours, until cheese melted. Stir occasionally. Try not ot let it boil, if you need turn it down to keep warm.

The BEST day!!!!

I had the BEST birthday ever!!! What could have been better? I wake up this morning to breakfast in bread! (Ok now, thank you Sandra for pointing out my air head moment here. too funny!!! Yes, I really mean, breakfest in Bed.) I tell you, James makes great french toast! What a great surprise! It lasted all day long! Daddy and Lil E baked and decorated a cake for me! It was just the sweetest!




Lil K finally got to pet the horse today, and she loved it and was so excited!



I was pampered all day long! I was shown so much love today, by everyone. I received sweet messages, lots of calls, cards, and more! I am really blessed beyond belief! My husband is truly the best! I can't imagine more! He gave me the sweetest card, It was all about God's Perfect Plan. It was truly special! And he wrote the sweetest message inside himself. I'll share a bit with you. "With God by our side all things are possible. We all love you very much. Thank you, sweetheart for being such a wonderful wife and an awesome mom to our beautiful girls. Hope you have a very wonderful and blessed day." What a sweet heart he is! He pampered me all day long! He wouldn't let me cook or clean or anything! I wanted a nap, so he rubbed my back and Lil E rubbed lotion on my feet! Aww, a day in the home spa!!!! Wonderful!!!! Then he made me a special dinner. He grilled steaks out and some shrimp too. He made baked potatoes, corn, and ranch style beans. It was so very yummy! Then we played a game after cake tonight!!! I'm the luckiest girl in the world! I love you, James! Thank you so much for making my Birthday the BEST ever! I'm honored to have you as my husband and Best Friend! I'm so glad that you and the girls did all you could do to make mommy's day super special! They even both colored together to make me a picture! Here is is!


I'm off to bed now! Thank you, Jesus, for my family and friends! I'm humbled by the love that I received today!

A Simple Day of Country Living

We are so blessed to live out in the country! It's what hubby and I have always wanted! Our neighbors (good friends) have a horse that we love. We gave him a nick name of Buddy, and we just love to feed him and pet him. It's so peaceful out here, we can sit on the back deck and just see country all around! Then when Buddy comes up to our fence we can pet and love on him.


Buddy was trying to get Lil E's attention, she he kept getting her pants and then kissing her and daddy! It was just too cute.






Then we all headed over to the park for some fun! We took the ducks some bread today. I don't think they get enough food in the winter, so I make sure to go and feed them. I love it!



We were just enjoying watching the ducks and geese. It was beautiful today and they sure were glad for some extra food. After we fed the ducks all of us headed to the playground for lots more fun!

Then after we came home, we had lots more fun and mommy and daddy even played a game of sequence. I love that game! Then it was time for our dinner and to settle down for the night. We had salad with grilled Chicken for dinner tonight. It was yummy! Daddy is an awesome griller!
Days like today, make me step back and reflect at just how blessed I am! God has blessed me beyond! I would have never imagined life to be this wonderful! When God moved us here, I wasn't sure why, and sometimes I still have a hard time, but I'm so thankful for all the little moments and the times like today! They remind me, just why we were moved here! I love the simple country life! It's wonderful! And what a wonderful way for my girls to enjoy life.
