Abstract
La présente divulgation concerne le domaine de la technologie laitière. Elle se rapporte à des souches de bactéries lactiques fournissant une postacidification faible ou réduite. Elle se rapporte à des compositions comprenant de telles souches, des procédés de production de produits alimentaires fermentés et des produits comprenant lesdites souches. En outre, elle se rapporte à l'utilisation desdites souches pour réduire la postacidification et/ou augmenter la texture d'un produit alimentaire fermenté.
